Cabernet Sauvignon

Cabernet Sauvignon (also known as Bouchet, Bouche, Petit-Bouchet, Petit-Cabernet, Petit-Vidure, Vidure, Sauvignon Rouge) is probably the most famous red wine grape in the world. Despite its prominence in the industry however, this grape is a relatively new variety, as it was the product that resulted from a chance crossing between Cabernet Franc and Sauvignon Blanc. Its popularity is often attributed to its ease of cultivation with vines prone to vigorous yields. As a late flowering and late ripening variety - Cabernet Sauvignon grapes mature slowly - harvests usually take place between September and October. The grapes themselves are small in size, have thick skins and are black/purple in colour.
