The character of The Dalmore 15 is achieved by then splitting the whisky equally between three different sherry woods; Amoroso, Apostoles and Matusalem oloroso for a further three years. The spirit is finally married together in an upstanding sherry butt, allowing the flavours to infuse.
A 1989 vintage and aged 25 years old, matured in a Hogshead cask this is a lovely, lovely single malt. With a gentle 42.5% alcohol volume, it all comes together as a fantastic, mellow whisky. Only 280 bottles have been released.
Matured in the traditional style in American bourbon barrels, this whisky is then ‘finished’ in Aged Tawny Port hogsheads, sourced from the Douro region in the north of Portugal. During this second period of maturation the whisky derives many interesting characteristics specific to the Port hogshead.Taste:Butterscotch, herbs, cinnamon, peaches and sultanas, infused with rich port and oak wood notes.
Always from a specially-selected single cask, Hepburn’s Choice from Hunter Laing Bottlers range is bottled at 46% alcohol, and naturally without artificial colouring or chill-filtration. Each bottling is chosen to showcase the specific characteristics of one of Scotland’s whisky producing regions, or those of a distillery in particular. This new range is named in honour of their directors’ late maternal grandfather, William Hepburn, who travelled the globe with his job in the Diplomatic Service. With a fine judgement honed at many embassy functions, Mr Hepburn was a connoisseur of his homeland’s whiskies: with this in mind we believe these bottlings would indeed have been “Hepburn’s Choice”.
The Diageo Managers Dram bottlings are a series of bottlings selected by distillery managers that were bottled at natural cask strength. The whiskies were for employees only and they could only sell their bottles upon retirement. This whisky from Dailuaine was matured in sherry oak casks and was bottled in November 2000. Rich and full bodied with sweetness coming Christmas cake flavours. There are also grassy notes with hints of citrus peel, freshly buttered toast and fried fruit.
Containing whisky matured in nutty oloroso and sweet, raisiny Pedro Ximenez sherry casks. The nose is rich and intense with aromas of cinnamon, raisins and baked fruit, red berries and bread. On the palate the doughy, bready characters come to the fore and are joined by notes of dried fruit, black pepper and sweet spice. A long lingering finish is bolstered by flavours of ginger, stone fruit and more dried fruit.
Light and cheerful as a lazy summer morning, this single smooth single malt has an enigmatic and tantalising nose, and walks a slender beam between fresh and super-ripe. Wild floral high notes, traces of eucalyptus and dark chocolate work in concert to create a chorus of flavours. Add water if you wish, but do it with care; you probably need less than you think.

The Tomatin 14 Year Old is soft, smooth and sweet, benefiting from its time spent in Tawny Port casks which previously held port for around 50 years. Rich but balanced aromas of red berries, sweet honey and rich toffee develop into aspects of light fruits and nuts on the palate and an abiding finish of smooth fruit salad.
