Champagne Ayala is one of the longest-established champagne houses; it has been based in Aÿ, at the heart of the great champagne vineyards, since it was founded over 150 years ago. Independent and family-owned, it is still today the archetype of a great and historic house, producing top quality wines which are enjoyed around the world for their freshness and elegance. In 2005 the Bollinger family bought this fine estate, with the intention of restoring it to its former glory. This was the start of a resurgence for Champagne Ayala, with complete restoration of winemaking facilities and the arrival of new staff. They now employ around 15 people, keeping the family spirit of its origins.
Rosé Majeur is the perfect embodiment of the originality and finesse of the House’s wines. Made predominantly from Chardonnay it is crafted with the addition of a small proportion of Pinot Noir from the best crus of the Montagne de Reims. A low dosage enables it to express the House style, both delicate and generous, with great elegance.
Ayala Rose Majeur is a pale delicate pink colour. The aromas are charming, generous and open, revealing aromas of red berries (strawberries, raspberries) and vine peaches. The palate is light yet expressive. It shows great freshness due to the high proportion of Chardonnay in the blend. There are notes of gooseberries and raspberries with a lengthy and voluptuous finish. This champagne is at ease with food. Rosé Majeur is the perfect companion for salmon fillet, lamb chops or a red berry tart.
