Castillo Perelada Cava Brut Reserva NV (1x75cl)

The Perelada estate, an impressive fortress and palace that was previously owned by the Counts of Pereleda and a Carmelite monastery, was purchased in 1923 by Miguel Mateu, an active political and cultural ambassador of the time. Don Miguel revitalized the wine producing tradition of the estate records showed that there where vineyards planted in the Medieval period. He turned the estate into his own private cultural centre, building up the collections which would become the Castle museum which is today open to the public.

A blend of the three traditional Cava making grapes: Parellada (35%), Xarel·lo (45%), Macabeo (30%).

After primary fermentation, the wine is aged in bottle on the lees for 15 months before disgorging. Brilliant pale yellow colour with a generous stream of fine bubbles. The nose is clean and fruity with light yeasty notes from ageing. It is pleasantly bone dry, with a round and refreshing mouthfeel and nice flavour complexity.

This is a fine Cava, and that offers markedly better quality than its price might indicate.

Gonzalez Byass Vilarnau Rosado NV (1x 75cl)

Vilarnau Cava is made in a state of the art winery, with sleek minimalist design. The estate lies 250 metres above sea level, enjoying a Mediterranean climate. It is shielded by the Montserrat Mountains to the north and the Littoral range to the south. The winery is located close to the cosmopolitan city of Barcelona. Specialising in small-scale, artisan production of exclusive, high quality cavas, the winery shares its innovative, creative and dynamic nature with Spain’s most avant-garde city.

The red Trepat and Pinot Noir grapes macerate at 8°C for 18 hours in contact with the skins so as to extract the maximum colour and aromas. In these varieties the precursors of the aroma are found primarily in the skin. By tchilling the grapes they manage to protect these precursors which will later turn into the primary aromas that are characteristic of this wine, namely floral and ripe red fruit. After maceration, the must which is already pink is crushed. This is then fermented in stainless steel tanks at a controlled temperature of 14°C. The wine is then blended and bottled with the second fermentation taking place in bottle over a period of around 6 weeks at a constant temperature of 15°C.  This cava remains in contact with the yeast for at least 15 months. 

This cava is an intense pink colour with great aromatic complexity and it reflects the Mediterranean character of the area where it is made. With plenty of sunlight the grapes here ripen more fully, thus developing greater colour and aromartic complexity than is perhaps expected.

Trepat and Pinot Noir grapes give this delicious pink fizz a bright redcurrant colour, and vibrant ripe strawberry and raspberry fruit characters. Aged for 18 months prior to disgorgement, it is soft and juicy in character with refreshing balanced acidity – the perfect aperitif.

For almost a century, Recaredo has maintained a firm commitment to produce terroir wines that reflect the landscapes of the Alt Penedès (Barcelona) as honestly and transparently as possible. They make only vintage Brut Nature Cavas with a distinctive character marked by long ageing.

Recaredo's wines are both organic and biodynamic; they let plant cover grow spontaneously between the vines. This cover crop plays a crucial role, fostering biodiversity, loosening the soil, and regulating water retention and drainage (essential in the dry farming system practised).

Grapes were harvested from Recaredo’s Serral del Vell estate in the Bitlles Valley Highlands. Serral del Vell hillock is a mainly calcareous terrain characterised by disjointed landscapes in the county of the Alt Penedès, Barcelona.

Key winemaking features: 53% Xarel-lo, 47% Macabeo. Manually harvested; the Xarel-lo component is entirely aged in oak casks; secondary fermentation is in bottle (as with all Cava and Champagne); aged in bottle for a minimum of 8 years; riddled and disgorged by hand.

Recaredo describe this as a "well-upholstered wine with green plum and apple aromas". The palate is deep, pure, structured, vinous, long and rich with resonant acidity.  Matches best with charcuterie, oysters or white meats.

Agustí Torelló Mata is one of the most prestigious sparkling wine producers in Spain and has arguably created more prestige for the reputation of Cava, than any other winery in the Penedès region of Catalunya. Their hard work and world-renowned expertise have proven that Cava – Spain’s only sparkling wine appellation – can rival the best Champagnes and sparkling wines in the world! Kripta for instance, their cult cava, is a collector’s wine and outstanding.

They have pursued this goal with single-mindedness and determination, creating exquisite, hand-crafted Cavas (now classed as Corpinnats) only based on indigenous varieties from the finest vineyards in the region. While their neighbors may have been tempted to include ever-increasing quantities of Chardonnay and Pinot Noir (permitted under the DO guidelines) this winery prefers to craft regionally expressive Cava that reflects the unique terroir of Penedès.

Agustí Torelló Mata came into existence in the 1950s after founding father Agustí Torelló decided to pursue his dream of creating a high-quality, premium sparkling winery in the legendary vineyard region of Sant Sadurni d’Anoia, just south of Barcelona. He, in essence, set out to dispel the myth that Cava just means cheap sparkling wine, knowing that best terroirs in Penedès were unique and exceptional; they just needed someone to properly exploit them! At a young age, he decided not to follow in his families footsteps – who were actually tailors and musicians! – and he founded a small winery in 1950. What was then a brave endeavor with no guarantee of financial success was supported by his work in the region’s first wine analysis center, which Mata created in 1953. Supplementing his income by managing other estates, the reputation of Agustí Torelló’s Cava soon grew on the international stage, while the man himself established a promotional body – the Cava Guild- of which he was justifiably elected President of Honor.

The fine reputation of the estate and Agustí Torelló’s great work continued to grow into the 21st Century, today the winery is still incapable family hands, managed by his four sons: Agustí, Gemma, Alex, and Lali. They have expanded their estate’s holdings to 35ha of organic vineyards and also buy in fruit from over 100 ha to cover their requirements. Their range of Cavas includes dry and very dry, low dosage styles, focusing solely on growing the indigenous varieties of the area with impressive results. All their Cavas are excellent, but the star of the show is undoubtedly their prestige cuvee, Kripta.

46% Xarel-lo/Xarello, 31% Macabeo, 23% Parellada.

Vivacious and bright, this NV Cava has plenty of energy in its light-bodied core. The wine finishes with real drive, likely due to the 46% Xarel-lo in the blend, with nearly one-third Macabeo bringing elegance on the mid-palate as well as apple fruit. Appetising, with attractive grip on the finish.
