Castillo Perelada Cava Brut Reserva NV (1x75cl)

The Perelada estate, an impressive fortress and palace that was previously owned by the Counts of Pereleda and a Carmelite monastery, was purchased in 1923 by Miguel Mateu, an active political and cultural ambassador of the time. Don Miguel revitalized the wine producing tradition of the estate records showed that there where vineyards planted in the Medieval period. He turned the estate into his own private cultural centre, building up the collections which would become the Castle museum which is today open to the public.

A blend of the three traditional Cava making grapes: Parellada (35%), Xarel·lo (45%), Macabeo (30%).

After primary fermentation, the wine is aged in bottle on the lees for 15 months before disgorging. Brilliant pale yellow colour with a generous stream of fine bubbles. The nose is clean and fruity with light yeasty notes from ageing. It is pleasantly bone dry, with a round and refreshing mouthfeel and nice flavour complexity.

This is a fine Cava, and that offers markedly better quality than its price might indicate.

Gonzalez Byass Vilarnau Rosado NV (1x 75cl)

Vilarnau Cava is made in a state of the art winery, with sleek minimalist design. The estate lies 250 metres above sea level, enjoying a Mediterranean climate. It is shielded by the Montserrat Mountains to the north and the Littoral range to the south. The winery is located close to the cosmopolitan city of Barcelona. Specialising in small-scale, artisan production of exclusive, high quality cavas, the winery shares its innovative, creative and dynamic nature with Spain’s most avant-garde city.

The red Trepat and Pinot Noir grapes macerate at 8°C for 18 hours in contact with the skins so as to extract the maximum colour and aromas. In these varieties the precursors of the aroma are found primarily in the skin. By tchilling the grapes they manage to protect these precursors which will later turn into the primary aromas that are characteristic of this wine, namely floral and ripe red fruit. After maceration, the must which is already pink is crushed. This is then fermented in stainless steel tanks at a controlled temperature of 14°C. The wine is then blended and bottled with the second fermentation taking place in bottle over a period of around 6 weeks at a constant temperature of 15°C.  This cava remains in contact with the yeast for at least 15 months. 

This cava is an intense pink colour with great aromatic complexity and it reflects the Mediterranean character of the area where it is made. With plenty of sunlight the grapes here ripen more fully, thus developing greater colour and aromartic complexity than is perhaps expected.

Trepat and Pinot Noir grapes give this delicious pink fizz a bright redcurrant colour, and vibrant ripe strawberry and raspberry fruit characters. Aged for 18 months prior to disgorgement, it is soft and juicy in character with refreshing balanced acidity – the perfect aperitif.

Recaredo Cava Brut de Brut 2008 (1x75cl)

For almost a century, Recaredo has maintained a firm commitment to produce terroir wines that reflect the landscapes of the Alt Penedès (Barcelona) as honestly and transparently as possible. They make only vintage Brut Nature Cavas with a distinctive character marked by long ageing.

Recaredo's wines are both organic and biodynamic; they let plant cover grow spontaneously between the vines. This cover crop plays a crucial role, fostering biodiversity, loosening the soil, and regulating water retention and drainage (essential in the dry farming system practised).

Grapes were harvested from Recaredo’s Serral del Vell estate in the Bitlles Valley Highlands. Serral del Vell hillock is a mainly calcareous terrain characterised by disjointed landscapes in the county of the Alt Penedès, Barcelona.

Key winemaking features: 53% Xarel-lo, 47% Macabeu. Manually harvested; all Xarel-lo component aged in oak casks; secondary fermentation in bottle (as with all Cava and Champagne); aged in bottle for a minimum of 8 years; riddled and disgorged by hand.

Recaredo describe this as a "well-upholstered wine with green plum and apple aromas". The palate is deep, pure, structured, vinous, long and rich with resonant acidity.  Matches best with charcuterie, oysters or white meats.

Recaredo's wines are both organic and biodynamic; they let plant cover grow spontaneously between the vines. This cover crop plays a crucial role, fostering biodiversity, loosening the soil, and regulating water retention and drainage (essential in the dry farming system practised).

Made exclusively with grapes from vineyards located on the sloping banks of the Bitlles River. The vines grow in highly calcareous soils.

Key winemaking features: 71% Monastrell, 23% Pinot Noir, 6% Garnacha. Manually harvested; macerated for 6 hours; 10% of the blend aged for 2 months in oak casks; secondary fermentation in bottle (as with all Cava and Champagne); aged in bottle on lees for a minimum of 3 years; riddled and disgorged by hand.

Fresh wild red fruit aromas along a herbaceous background and pastry notes. Flavourful and fresh attack with good long aftertaste. Ideal as an aperitif or with grilled meat, risotto or fruit desserts.

Recaredo's wines are both organic and biodynamic; they let plant cover grow spontaneously between the vines. This cover crop plays a crucial role, fostering biodiversity, loosening the soil, and regulating water retention and drainage (essential in the dry farming system practised).

Key winemaking features: 52% Xarel-lo, 32% Macabeu, 16% Parellada. Manually harvested; 9% of the blend aged in oak casks; secondary fermentation in bottle (as with all Cava and Champagne); aged in bottle for a minimum of 5 years and 5 months; riddled and disgorged by hand.

This outstanding Cava is completely dry. It has wonderful chalky minerality with notes of nutmeg and ginger. There is a wonderful fleshy texture redolent of poached pears. Matches many things, but especially shellfish, soft cheese or rice dishes.

Torello 225 Brut Nature Cava de Paraje Calificado 2013 (1x75cl)

The Torelló family has been winegrowers for centuries, and as they enter the 22nd generation, their tradition shows no sign of slowing. It wasn’t until 1951 that Francisco Torelló started the production of Cava, from the Can Martí estate, which is made up of 135 hectares in the fertile region of Alt Penedès. Torelló favours traditional agriculture, prioritising quality and respect for the environment. His Cavas are true to type - made with typical Spanish grapes.

The grapes come from the vineyard area of Vinyes de Can Martí, which was one of the first areas to gain the recognised status of Cava de Paraje Calificado. The climate is typically Mediterranean & soil type is chalky/clay. Clay helps to capture and retain water, which is important when annual rainfall is low. Their wines have great structural potential and high acidity. Each vineyard is treated separately, leaving vegetation cover in the most vigorous plots to avoid excessive vegetation growth. At the time this wine was made the vineyards were in transition to organic farming certification.

Each grape variety is hand harvested and transported quickly to the winery to avoid any oxidation. Consequently, the grapes arrive in complete bunches and in perfect condition. In the winery, the grapes are sorted and each variety is pressed separately, making use of the first pressing which, with careful winemaking, results in excellent wines. Torelló has recently incorporated Inertias technology into their presses, which also protects the must from oxidation during the grape-pressing phase. Traditional method secondary fermentation and ageing take place in bottle. Before bottling the Xarel-lo base wine is aged in new Allier oak barrels. After its secondary fermentation in bottle, the wine is aged for over 40 months before release.

This wine is creamy in texture and well-balanced. On the palate there are subtle toasty notes of vanilla from the Allier oak barrels having spent time ageing on its lees.

Cava Recaredo Reserva Particular de Recaredo 2003 (1x 75cl)

Reserva Particular de Recaredo represents the Mediterranean in its purest form, interprets the calcareous lands of the easternmost part of the Penedès region and shows the profound character of our oldest Xarel·lo and Macabeu vines. Mineral and complex, full of inner life with long-lasting flavour. Completely dry brut nature cava with no added sugar. Recaredo recommend serving Reserva Particular at around 10°C and opening the bottle a few minutes before serving.
