Castillo Perelada Cava Brut Reserva NV (1x75cl)

Perelada Brut Reserva is made with wine of the three typical cava varieties: Macabeo, Xarel·lo and Parellada. This is a classic cava made according to the traditional method, with the utmost rigor and care that are characteristic of Perelada.

Pale yellow colour. Good bubble detachment. Thanks to its ageing, it has developed a fine aroma with fruit hints. Its well balanced structure, elegance and sensorial richness form an unmistakable personality.

Cava Recaredo Reserva Particular de Recaredo 2005 (6x75cl)

Reserva Particular de Recaredo represents the Mediterranean in its purest form, interprets the calcareous lands of the easternmost part of the Penedès region and shows the profound character of our oldest Xarel·lo and Macabeu vines. Mineral and complex, full of inner life with long-lasting flavour. Completely dry brut nature cava with no added sugar. Recaredo recommend serving Reserva Particular at around 10°C and opening the bottle a few minutes before serving.

Recaredo Cava Brut de Brut 2007 (1x75cl)

For almost a century, Recaredo has maintained a firm commitment to produce terroir wines that reflect the landscapes of the Alt Penedès (Barcelona) as honestly and transparently as possible. They make only vintage Brut Nature Cavas with a distinctive character marked by long ageing.

Recaredo's wines are both organic and biodynamic; they let plant cover grow spontaneously between the vines. This cover crop plays a crucial role, fostering biodiversity, loosening the soil, and regulating water retention and drainage (essential in the dry farming system practised).

Grapes were harvested from Recaredo’s Serral del Vell estate in the Bitlles Valley Highlands. Serral del Vell hillock is a mainly calcareous terrain characterised by disjointed landscapes in the county of the Alt Penedès, Barcelona.

Key winemaking features: 53% Xarel-lo, 47% Macabeu. Manually harvested; all Xarel-lo component aged in oak casks; secondary fermentation in bottle (as with all Cava and Champagne); aged in bottle for a minimum of 8 years; riddled and disgorged by hand.

Recaredo describe this as a "well-upholstered wine with green plum and apple aromas". The palate is deep, pure, structured, vinous, long and rich with resonant acidity.  Matches best with charcuterie, oysters or white meats.

Made exclusively with grapes from vineyards located on the sloping banks of the Bitlles River. The vines grow in highly calcareous soils.

Manually harvested; macerated for 6 hours; 10% of the blend aged for 2 months in oak casks; secondary fermentation in bottle (as with all Cava and Champagne); aged in bottle on lees for a minimum of 3 years; riddled and disgorged by hand.

Recaredo's wines are both organic and biodynamic; they let plant cover grow spontaneously between the vines. This cover crop plays a crucial role, fostering biodiversity, loosening the soil, and regulating water retention and drainage (essential in the dry farming system practised).

Key winemaking features: 52% Xarel-lo, 32% Macabeu, 16% Parellada. Manually harvested; 9% of the blend aged in oak casks; secondary fermentation in bottle (as with all Cava and Champagne); aged in bottle for a minimum of 5 years and 5 months; riddled and disgorged by hand.

This outstanding Cava is completely dry. It has wonderful chalky minerality with notes of nutmeg and ginger. There is a wonderful fleshy texture redolent of poached pears. Matches many things, but especially shellfish, soft cheese or rice dishes.

Bodegas Escudero Cava Brut Nature Benito Escudero Spain Nv (1x 75cl)

Lemon yellow with steely glare. Fine bubble that forms a small string of slow evolution. Great intensity in the nose , pleasant aromas typical of the variety and the aging in bottle. Discover fruity aromas (apple) and others to dry straw. Pleasant on the palate, with a mild attack of acidity and a very well integrated bubble, light through the mouth and a good final impression. Apple aftertaste.
