Partially vinified in wooden barrels to add complexity then aged for 8-10 before release this is an elegant wine with notes of linden tea, cacao, blond tobacco and vanilla. On the palate it is full bodied with flavours of candied white fruit, stoney, mineral notes, toasted bread and smoke. Clos des Goisses is a very fine wine before being a very fine champagne. A perfect and unforgettable match for strong-flavoured dishes such as game, truffles, caviar and soft cheeses. Philipponnat recommend that you decant prior to serving to allow it to breath.
