In 2011, a large part of the harvest was vinified with complete grapes as the maturity and concentration of flavours within the grapes was so good. The wine was aged in big oak vat from Burgundy and Austria. The origin and age of each barrel is specifically chosen to enhance the characteristics of our different vines.
2011 was a great vintage in the south of France. The rainfall during the winter and spring was slightly higher than in the previous two years and has been particularly beneficial to the balance of the plant. A mild spring preceded a windy and dry summer, preserving a the crop perfectly. The grapes were hand picked using a small team of pickers. This allows us to stretch out picking dates and to maximize the opportunity of harvesting each variety at its best moment of maturity. There was strict selection in the vineyard and where it was felt to be necessary, individual buches of grapes were removed.
This wine is very expressive and "explosive", with a lot of red and black fruits, a nice spice, but without hardness. In bottles since the summer of 2013, it gives a lot of seduction, with much density as well as the softness whilst retaining this famous Mourvedre's character!
