Domaine de Vauroux was founded in 1956 by the Tricon family. Today, grapes are sourced from 27 hectares of vineyards on the warmer slopes, selecting sites with the best concentrations of Kimmeridgian clay, which helps drainage, reducing yields and increasing the quality of the grapes. Current owner, Olivier Tricon, has taken the domaine forward in leaps and bounds, receiving shining reviews for his Premier Cru Montée de Tonnerre.
This Chablis is medium bodied with crisp, apple acidity, pure fruit flavours of white peaches and pears and a classic, steely, dry finish. Try it with any white meats or seafood, such as; boiled lobsters with tarragon butter, sauteed langoustine with Chardonnay reduction or pork medallions with mustard cream sauce.
