Domaine Maillard Pere Et Fils Chorey-Les-Beaune Blanc 2016 (1x75cl)

This 17th century property was bought by Pascal Maillard's father in 1952. Situated on the slopes below Savigny-les-Beaune at an altitude of 230m a.s.l and a kilometre from the town of Beaune the vineyard of Chorey-les-Beaune can be found. Soils consist of calcareous brown earth, marlstone and sandy limestone. The biggest threat to a quality harvest are frost and autumnal rains, which both occur frequently.

After a manual harvest and rigorous selection of the best bunches of grapes rigorous in the vineyard, the pressing is pneumatic, and is slow as it is done at low pressure. Once the juice is extracted, it is put in the vat for settling and put in barrel. The fermentation is completed in cask. The wine is then left to mature in barrels measuring 228 litres (some of which are new) for between 12 and 18 months during which time stirring occurs, the wine rests on the fine lees to 'nourish and give roundness' to the wine. Then it is blended and undergoes filtration before being bottled.

Pale yellow in colour, this wine displays a floral expressive nose accompanied by a mineral touch. The flavours go on to complemented by the wine's flexibility and roundness.
