Domaine Yves Cuilleron St. Joseph Les Pierres Seches 2016 (1x 75cl)

Grapes for this wine are chosen from a selection of vines on the hillsides of the Chavanay commune. Les Pierres Sèches is not a district, it refers to the dry stone walls used to strengthen the vine terracing. The soil is sandy, granitic and shallow. No insecticides or pesticides are used. Only a few treatments will be used (depending on weather) and they use a small amount of organic fertiliser, out of respect for the soil and vine balance. Vigour and yield control, such as leaf-thinning and green harvesting are carried out to promote grape maturation.

The grapes are harvested manually. The sorting, crushing and partial destalking was carried out in the cellars. Fermentation happened in open tanks for about 3 weeks and was temperature controlled. Malolactic fermentation was allowed to occur in barrels, with natural yeasts. The wine is then aged for 18 months in barrels.

Ruby red in colour with an elegant perfumed fruity nose of raspberry, blueberry, violet and pepper. Fruity, juicy and on the lean side, but firm on the finish.
