Blended from 8 different parcels across the appellation, this wine gives an excellent representation of the terroir of Puligny-Montrachet. The domaine was inherited from father Gerard Chavy 2004 and was split with brother Alain, who makes wine under his father's name. Neither overtly fruity nor over-oaked, Jean-Louis Chavy's wines are extremely well balanced, emphasising the classic minerality of Puligny-Montrachet.
The cellar is very modern, with temperature control, a pneumatic press and stainless steel tanks. Harvesting is performed by hand and the grapes are crushed and pressed immediately upon reception. Fermentation begins after racking off the gross lees and ageing is in older French oak barriques in contact with the fine lees which are stirred occasionaly in order to incerease complexity. Bottled with a light filtration.
An elegant yet full bodied style with citrus and honey aromas, which are echoed on the palate and complemented by a touch of toasty oak, underpinned by fresh acidity.
