The Mandrarossa wines are created from the project of land mapping, selection of the vineyards and cultivars that express the finest aspects of the Menfi and Terre Sicane territory. This strip of land, on the south-western coast of Sicily, has the ideal microclimatic conditions for viticulture: intense sunlight, sea breezes, mild temperatures, multiple elevations and exposures to different types of soils, among which the limestone ones with the highest potential. The passion and care with which the small group of winegrowers together with the agronomists, cultivates their own vineyard following the natural seasonal rhythms, contributes to guaranteeing the high-quality level of the grapes. The knowledgeable work of the oenologists, preserving the grapes’ integrity, enhances the great energy and vitality expressed by the wines. Balance, elegance and unique aromas strengthen the bond between the wines and the territory of origin, and tell the story of a new and diverse Sicilian wine reality.
The grapes are destemmed and crushed into temperature controlled stainless steel tanks and are fermented with a selected yeast culture between 22 and 25 degrees C with automatic pumping over of the juice and occasional micro-oxidisation in order to extract plenty of colour and fruit but keep the palate soft. After the alcoholic fermentation, malolactic fermentation is encouraged and the wine is further aged in tank before fining with Albumin, stabilisation and bottling on site at the winery. The wine undergoes a final period of bottle ageing before shipping.
The grapes are sourced from a variety of vineyards in the North Western corner of Sicily, which are all linked to Settesoli's detailed computer traceability system. This benefits the final complexity of the wine by selecting from a variety of altitudes, aspects and soil types, consequently the grapes are harvested in the first 3 weeks of September according to the individual ripeness of each vineyard.
A ruby red colour, with bright intensity. Fresh with good vanilla flavours. Soft and warm, with silky and sweet tannins.
