Mount Horrocks Cabernet Sauvignon 2015 (1x75cl)
Mount Horrocks Wines is run by proprietor/winemaker Stephanie Toole. Stephanie restricts production to approximately 3,500 cases per annum in order to achieve her aims of quality and single vineyard expression. Stephanie describes her wines as 'essentially hand made food wines with an emphasis on structure as well as generous fruit flavours'. All grapes are 100% estate grown from three separate vineyard sites totalling nearly 10 hectares which, in 2014, were 'A grade certified' by Australian Certified Organic (ACO). Her persistence with classic, no-compromise winemaking and a fully integrated organic approach to growing and making sets Mount Horrocks wines apart from the mainstream.
Hand picked from Mount Horrocks' estate owned single vineyard in the cooler Polish Hill River sub-region of the Clare Valley which is managed using sustainable natural farming and organic practices.
The grapes were fermented in stainless steel tanks and pumped over five times a day. A gentle pressing followed fermentation before the wine was matured in barriques, of which 35% was new French oak, for 18 months.
Deep magenta. The bouquet opens heady, becoming brooding, with forest fruits and a herbal, bramble edge. Very elegant, structured and long. The palate is all dark berry and chocolatey, flowing to a tapestry of flavours and textures interwoven with surprising smooth tannins, elegance and length. It is at once rich in flavour yet light in weight - a beguiling contrast making for appealing drinking now, yet should age well for up to a decade.
