It all began in 1927, when Andrew Peller first arrived in Canada from Hungary. Having owned a series of successful businesses, he wanted to finally pursue his dream. He envisioned a day when Canadians, like Europeans, would come to appreciate premium-quality wines and enjoy sharing them with family and friends. Naturally frozen Cabernet Franc grapes are hand harvested from Niagara-on-the-Lake vineyards at -10°C. Pressed frozen, releasing only one drop of pure extract from each grape. Fermentation is performed at a cool temperature to retain fruit concentration (a short skin contact for colour and complexity), then 80% of the wine is aged in stainless steel and 20% is aged in older French oak barrels for added complexity.
This Icewine has a rich, silky mouth-feel with wonderful flavours of tangy red berries, cherry and red currant jelly. Lovely notes of cherry juice and blood orange linger on the finish. Soft delicate tannins and the perfect balance of sweetness and acidity provide great mouth-feel. Best enjoyed through 2020.
Serve chilled at 8 to 10°C in small white wine glasses, 1 to 2 oz per person. Enjoy before a meal, chilled with your favourite vodka and a couple of frozen grapes for an amazing Icewine Martini. Enjoy during a meal with peppercorn pâté or foie gras for a mouth sensation. Try with black olive tapenade on crusty baguette. Enjoy after a meal with plum cobbler, fig cakes, date squares, date cakes, dark chocolate molten cake, chocolate cake with strawberry coulis, nut based cakes; fruit based desserts with blueberry, blackberry, cherry, strawberry, raspberry, Saskatoon berry, rhubarb or plum.
