The fruit for this wine comes from vineyards in La Consulta and Perdriel which have an altitude between 900 and 1,100 metres above sea level and poor soils. The vines have an average age of over 50 years and yields are less than six tonnes per hectare. Harvest is always carried out by hand with a double selection of both clusters and berries.
A cold pre-fermentation maceration took place for 12 days at a temperature of 8ºC. Fermentation with native yeasts occurred over a period of 17 days in stainless steel tanks, with temperatures ranging between 27-29ºC. Malolactic fermentation in French oak barriques proceeded a 10 month period of barrel ageing.
Dark, inky violet in the glass. An elegant combination of ripe plums, blackberries and violets on the nose, with hints of spicy black pepper, chocolate, vanilla and mocha. Concentrated and rich, with red and black fruit flavours, supported by vanilla and tobacco, a fresh acidity and excellent structure and length.
