The Umani Ronchi story is one of ancient vines, land and people. Seasons waxing and waning. Harvests changing. Wines coming into being. Today Umani Ronchi is the wine estate owned by the Bianchi-Bernetti family, who since 1959 have been making superb-quality crafted wines. All of their vineyards are farmed organically.
The name of Pecorino grape variety, also known as “grape of the sheep”, derives from the strong connection between sheep farming and agriculture.
After a light pressing, the must is rapidly cooled and then goes through static decantation. The alcoholic fermentation takes place in stainless steel tanks at a temperature of 16-18°C for about 10/15 days. The wine does not undergo malolactic fermentation. The wine rests in stainless steel tanks for about 4 months, in contact with its own yeasts.
Bright straw yellow in colour, it presents intense aromas of fruit and flowers to the nose, with very clear mineral notes that are intense and persistent. On the palate it shows a good structure and a pleasant freshness, with ripe fruit and zesty hints.
This wine''s fresh acidity makes it perfect on its own. However, the freshness of structure is also the perfect arena for fish, salads, soft cheeses and - yes - even Pecorino...
We like this because it's been one of our surprise hits. Everyone who tried it has loved it: we never expected that. It's almost everything in a glass for a tenner... acidity, body, huge bouquet, intensity, you name it.
