Villa Montes Cabernet Sauvignon 2016 (1x75cl)
Montes was established in 1988 by Aurelio Montes, Douglas Murray, Alfredo Vidaurre and Pedro Grand, with the aim to produce the best wines in Chile from the best regions. We have long admired Montes and what they have done for Chilean wine over the past three decades. Their wines are consistently good because they are meticulous throughout the entire production process. Montes own 800 hectares of vineyards in Apalta and Marchigue located in Colchagua Valley as well a single vineyard Zapallar, located in coastal Aconcagua Valley. Their own vineyards cover 75% of their requirements. The other 25% of fruit is produced on vineyards they have planted, cultivated and picked. In other words, they control everything except the ownership of the land. In addition to this control over the vineyard, they also sell in bulk what is not good enough to go into the bottles that carry their label. The results are there for you to taste.
The Cabernet Sauvignon grapes come from the Colchagua Valley renowned for making excellent red wines. In Colchagua, the moderating breezes from the ocean slow ripening allowing the wines to achieve perfect ripeness. Cool nights help to retain acidity giving freshness to the wines.
The 2015-2016 season began with a wet winter, followed by a spring and a summer that were cooler than usual. Although the spring and summer were dry, the rainy winter had allowed the necessary water reserves to accumulate. As a result, the vines reached harvest in good condition in a zone where water is a precious commodity.
All grapes were hand harvested then crushed before being transferred to temperature controlled stainless steel tanks for fermentation. Fermentation lasted 12 days and the wine was kept in contact with the skins for 10 days to add colour and structure. After malolactic fermentation, 30% of the final blend was transferred to French oak barrels for eight months to add complexity.
This Cabernet Sauvignon is deep ruby red in colour. On the nose, the wine has blackberry and blackcurrant aromas. The palate is medium bodied, with soft tannins, crisp acidity and a lingering finish.
