During the 2015 growing season a very mild summer was followed by warm and dry conditions during February which meant the Y Series Shiraz grapes began ripening early and rapidly. However, when the time came to pick we were ready and able to harvest the grapes fully ripened and in ideal condition.
The grapes were fermented in both static and rotary fermenters. Warm temperatures at the onset of fermentation and also 3 to 5 days post ferment maceration has helped extract soft fleshy tannins and build wine structure.
Deep crimson in colour, this wine shows intense youthful aromas of ripe dark berries, mulberry jam, Indian spice, and dark chocolate. Rich and ripe, the Y Series Shiraz is a glorious mouthful of South Australia with layers of ripe blackberries and black forest cake surrounded by soft, juicy, fully ripe tannins and a moreish finish. Drinks perfectly with a roasted shoulder of lamb seasoned with garlic, rosemary, oregano, sea salt and black pepper; or stuffed peppers, well-seasoned with lots of middle eastern spices.
